Simplify Vegan Cooking with 5-Ingredient Trader Joe’s Recipes

Pesto Pinwheels

First up, we have the Pesto Pinwheels. I think these are perfect for a quick snack or even a party appetizer. Here’s what you’ll need:

  • Vegan cheese
  • Vegan pesto
  • Marinated roasted red peppers
  • Crescent rolls

To make these, start by tearing your crescent rolls into rectangles and mending the seams together. Spread the vegan pesto evenly across the rectangles, leaving a little space on the edges. Add bits of roasted red peppers and some vegan cheese on top. Roll them up tightly and cut them into four pieces each. Pop them on a lined baking tray and bake for 13-14 minutes at 350°F until they’re golden and delicious. I tried these, and they were a hit at my last get-together! In my opinion, these pinwheels are a must-try for any pesto lover.

Falafel Wraps

Next, we have the Falafel Wraps, which are so fresh and easy to make. You’ll need:

  • Cucumber
  • Tomatoes
  • Hummus
  • Falafel mix
  • Pita bread

Prepare the falafel mix by adding water to the dry ingredients, mixing well, and letting it sit in the fridge for about an hour. Once set, scoop out tablespoon-sized balls and air fry them at 350°F for 10-12 minutes until crispy. You can also bake or deep-fry them if you prefer. For the sauce, thin out some hummus with water until smooth. Warm up the pita bread, cut it in half, and open the pockets. Spread regular hummus inside, add tomato slices, the crispy falafel balls, and cucumber slices. Drizzle with the hummus sauce, and you’re done! These wraps are so easy and delicious, perfect for a quick lunch. I love how versatile and fresh these wraps are; in my opinion, they make meal prep a breeze.

Lentil Bruschetta Salad

The Lentil Bruschetta Salad is as simple as it gets and so flavorful. Here’s what you’ll need:

  • Mixed greens
  • Bruschetta
  • Lentils

In a bowl, mix the greens, bruschetta, and lentils. The bruschetta acts as a dressing, and the lentils are already seasoned. Add a bit of black pepper if you like, but that’s optional. This salad is fresh, filling, and takes no time at all to put together. I love making this for a light dinner or a quick lunch. In my opinion, this salad is a lifesaver on busy days when I need something nutritious and fast.

Creamy Butternut Squash Gnocchi

Last but not least, we have the Creamy Butternut Squash Gnocchi with kale. This dish is so comforting and perfect for a cozy night in. You’ll need:

  • Cashews (soaked in hot water for 20 minutes)
  • Butternut squash soup
  • Black pepper (optional)
  • Gnocchi
  • Kale

Blend the soaked cashews with half a container of butternut squash soup and a bit of black pepper until smooth. Set aside. Cook the gnocchi by boiling it in salted water until it floats to the top, then strain. Use the same water to cook the kale for a few minutes until bright green. For extra flavor, toast the gnocchi in a pot with some olive oil or vegan butter until golden and crispy. Add the creamy sauce and cooked kale, mix well, and heat through. This gnocchi is creamy, delicious, and so easy to make. I love how the kale adds a nice texture and color to the dish. In my opinion, this is the ultimate comfort food that’s still healthy and simple to prepare.
