Hey everyone! Welcome back to the blog. Today, I’m super excited to share some incredibly easy and delicious vegan meal ideas from one of my favorite YouTube channels, Sweet Simple Vegan. Hosted by Chris and his partner Jasmine, they’ve been creating mouth-watering vegan recipes for over six years. In this video, Chris brings us a series of “lazy” Trader Joe’s meals. These meals are all about simplicity—minimal ingredients and maximum flavor. Perfect for those busy days when you just want to throw something together without a lot of fuss.
Taiwanese Green Onion Pancake Wraps
First up, Chris introduces us to a unique twist on wraps using Trader Joe’s Taiwanese Green Onion Pancakes. I think this idea is absolutely genius and here’s how you can make it:
- Ingredients:
- Taiwanese Green Onion Pancakes
- Korean Beefless Bulgogi
- Kimchi
- Sriracha and Roasted Garlic BBQ Sauce (optional)
- Green Onions (for topping)
- Steps:
- Cook the Korean Beefless Bulgogi with some kimchi.
- Use the Green Onion Pancake as a wrap and fill it with the cooked bulgogi and kimchi mixture.
- Top it off with some Sriracha and Roasted Garlic BBQ Sauce or Yuzu hot sauce.
- Garnish with chopped green onions.
I love how versatile these pancakes are. Chris mentioned that they could even be used as a breakfast burrito, which I think is a fantastic idea. This wrap is a fun, easy way to mix things up and it’s super delicious. I tried it myself and it was amazing!
Quick and Flavorful Fried Rice
Next, Chris shows us an incredibly simple fried rice dish that can be whipped up in no time. I think this is perfect for those nights when you just don’t have the energy to cook something elaborate.
- Ingredients:
- Japanese Style Fried Rice (or Vegetable Fried Rice)
- Chickenless Mandarin Orange Morsels
- Yuzu Hot Sauce (optional)
- Steps:
- Cook the Japanese Style Fried Rice in a pan.
- Add the Chickenless Mandarin Orange Morsels and cook everything together.
- Once cooked, mix in the orange sauce packet that comes with the morsels.
- Optional: Add some Yuzu hot sauce for an extra kick.
I love how this fried rice turns a simple side dish into a full, substantial meal. It’s flavorful, quick, and perfect for a busy weeknight. Plus, it’s highly customizable! I added some extra veggies and it was a hit in my household.
Easy Vegan Pizza
Finally, Chris shares a quick and easy vegan pizza recipe that’s perfect for parties or a cozy night in. I think this is a great way to enjoy pizza without all the hassle of making dough from scratch.
- Ingredients:
- Trader Joe’s Pre-made Crust (rectangular one)
- Red Pepper Spread with Garlic and Eggplant
- Marinated Grilled Artichokes
- Vegan Cheese Shreds (any brand)
- Fresh Basil (for topping)
- Steps:
- Brush the pre-made crust with a little oil.
- Spread the Red Pepper Spread with Garlic and Eggplant as the base sauce.
- Add marinated grilled artichokes and sprinkle vegan cheese shreds on top.
- Bake in the oven until the crust is crispy and the cheese is melted.
- Garnish with fresh basil.
I think the red pepper spread gives this pizza such a unique flavor. It’s a delightful change from the usual tomato base. I tried it with some olives and meatless pepperoni, and it was fantastic. This pizza is perfect for experimenting with different toppings.
